If you are like me, sometime today you will start to prepare for the week ahead. You might be writing out some goals or a to do list for the week, doing some cleaning, or perhaps you are doing some cooking for the week. I probably do more cooking on Sunday than any other day. That’s why I thought sharing a recent Pin Win would be the perfect post for today.
This Pin was pretty easy to follow. It is basically a twist on traditional lasagna. Instead of layering the noodles, meat and filling, you apply the filling and meat atop the noodle and roll it up. Visit the Pinterest Pin for the recipe.
I made a few changes to the recipe. To make it a bit healthier I switched from regular pasta noodles and pepperoni to whole wheat pasta noodles and turkey pepproini, used low fat ricotta cheese, and added baby spinach. Other changes I made were using two round 8 inch pans instead of the square baking dish, adding some grilled chicken strips, and using my own tomato sauce recipe. I used the 8 inch pans because I was only making the recipe for me and my mom. We ate one pan and I froze the other. Each pan made 4 rolls. I added chicken because I am one of those carnivore people who needs a decent amount of meat at a meal. I used my own sauce because my sauce is good 🙂
I know it sounds like I did my own thing. In a way I did. But that is the reason I like to cook more than bake because you can alter a recipe as needed and still have it come out great.
Both me and my mom were shocked at how good this came out. I was even more shocked that my mom liked it. She is not a fan of whole wheat pasta at all. We loved it so this is a definite Pin Win!

I have changed up lasagna but not really the form of it. I've seen individual lasagna roll ups and have been interested to try them. Love Pinterest; there are so many ideas aren't there?!

Girl my Godmother has been making 'Lasagna Roll Ups' for ever. We lost her a few years ago, so this recipe instantly made me think of her! I love your 'healthier twist' – I always adapt recipes, it's rare I ever make them 'as is'. 🙂
