If you read my updates on Fridays then you know my journey to becoming a single mother by choice is not going as smoothly as I thought it would. To facilitate things I have been trying to make healthier choices. Drinking more water is going well but eating right is always a struggle. Eating healthier requires more planning and cooking than just eating whatever is fast and easy. To make things easier I took my search to Pinterest. So today I am bringing you another installment of the 2015 Pinterest Project.
The Pinterest Project is a year long project where I will bring a Pin to life. Every week, when I remember, in 2015 I will take 1 pin and attempt to include it in my real life. It could be doing my take on a pinned recipe, shopping for or putting together an outfit that I’ve pinned, Doing a pinned exercise routine, following a pined organization strategy, or doing a craft that I’d pinned.
Here is the link to the Italian Chicken Potato and Green Bean Bake on Pinterest. I wanted to try this recipe because it is all in one dish (less clean up), it includes a good amount of veggies, and it seemed easy. The recipe said to put chicken, potatoes, and green beans in a baking dish with seasoning, cover with foil and bake on 350 for an hour. So that is what I did. The only difference between the Pinned recipe and mine was I used chicken breast tenderloins instead of whole breasts (that’s what I have on hand and I am trying to cut portions) and I used garlic and lemon pepper marinade (what I had on hand) instead of Italian salad dressing for seasoning.
So what do you think? The Pin is on the left. Mine is on the Right. Looks good to me! This dish was easy and super yummy! I had this for dinner on Sunday night and plan to have the left overs later this week. Next time I will add more string beans. That’s right I said next time. I will add this to my rotation of meals. I proclaim this a PIN WIN!!!!!

When I'm stumped on what to wear to work, I look at my Style board on Pinterest for inspiration. The cool thing is that I have a lot of the items necessary to complete the outfits. If not, I add it to my shopping list for the next mall visit…if I want it bad enough. I'm on Pinterest more than I care to admit. It's one of my favorite apps!

I love Pinterest and anything that I am going to do I put it in my like section because if I don't it won't get done lol. The food on pinterest has been hit or miss with me but I do love the desserts.

Pinterest is my best friend. I think I add a new board once a week. I try to meal prep for each week on Sunday so Pinterest is my go-to-spot for meal prep recipes. I've re-created a number of recipes and if they are good, then I usually share them on my blog
